soil

Negrar is located in the heart of the Valpolicella region. The soils are of volcanic origin and mainly contain limestone, clay and slate. The grapes are pruned according to the classic Pergola "Veronese" pruning system. Only the very best pieces of vineyard were used for this riserva.

vinification

Corvina (33%), Corvinone (33%) and Rondinella (33%). The grapes are harvested by hand and dried in special drying rooms for 90-100 days. The grapes are then pressed and fermented together with the pellets in stainless steel vats for 30-40 days. Every day the grapes are pumped over and the pellets are mixed with the juice to obtain maximum extraction. The wine is then transferred to a mix of 2nd and 3rd year barrels where it matures for another 8 to 10 years.
