This is a classic sherry vinegar with all the flavour and aroma of the sherry from wich it is made.

climate

Jerez has a Mediterranean climate with mild, wet winters and dry, extremely hot summers.

soil

The soil is very calcareous, which gives the surface of the vineyards a snowy appearance: these are the famous "albarizas".

vinification

Complete (alcoholic) fermentation in large stainless steel tanks, at a controlled temperature of around 24 degrees Celsius.
