Beautiful, light, golden yellow color. Delightfully fine and delicate, creamy nose. Abundant with aromas of fresh stone fruit, including hints of nectarine, peach, lychee, and apricot. Impressions of cedar, butter, vanilla, and a touch of toasted bread complete its beautifully balanced character. Full, enveloping qualities are countered by fresh, mineral accents that make the wine exceptionally intriguing. Blissful and long finish!

This class of Chardonnay is versatile and adaptable. The combination of deeper creamy notes with refined, elegant, and vibrant mineral tones makes it suitable for a wide range of dishes. Lobster, king crab, and other delicacies from the sea thrive alongside its mineral and salty character, while poultry and other white meats pair effortlessly. Whether it's pan-seared or grilled fish with a sauce... No problem!

climate

Darling has a steppe climate with very little annual rainfall. Microclimates due to its proximity to the ocean or higher altitudes provide more cooling during the night and winter with increased precipitation.

Poor sandy soils with limestone and pebbles in the top layer

vinification

The grapes are handpicked with an interlude of 2 to 3 weeks due to the different microclimates. 50% of the Chardonnay goes into stainless steel vats for liveliness and fresh fruit expression. 30% is aged in wooden barrels for depth, while 20% is aged in amphorae on its fine lees for elegance and creaminess, aiming to create the broadest possible complexity. After 6 months of resting on its fine lees, the wine is blended and bottled.
